ABOUT US
IN A NUTSHELL
Metszet Wine Bar & Salon is a place where you can discover lesser-known yet remarkably exciting Hungarian and international wines, all offering unbeatable value for money. We serve bottles that make you want to order another glass – and give you a reason to return later or take one home. But the space itself matters just as much to us: it should feel welcoming without being ordinary, relaxed without ever becoming dull. A shared space where you can simply drop in after a long day, yet still feel like dressing up for a special evening. In short: Buda’s living room. A place to unwind, find inspiration and meet friends; where a first date stands a good chance of becoming a second, and where you might return ten years later to celebrate everything that began that evening.
Wine plays an important role here, but it is not necessarily the main character. It is more of a bridge, bringing people, ideas and different worlds closer together: it provides the opening line, then makes room for conversation, unexpected discoveries, new ideas – and occasionally a few rhymes. That is why we want to fill Metszet with content that adds something to the evening and perhaps to the days that follow as well. Conversations, readings, cultural collaborations and encounters that allow everyone to take something home: an idea, a question or a renewed sense of momentum.
WINE BAR
Our selection is unapologetically owner-selected: only wines that the owners would gladly pour for their closest friends and family at home make it into our coolers. Building the wine list is therefore a deeply personal process. It includes several long-standing favourites that they searched for in other wine bars without success – so they ultimately decided to bring them to Metszet themselves.
The selection is backed by extensive experience. The owners have tasted more than four thousand wines and visited many leading wine regions and wineries, from Tuscany and Bordeaux to Australia’s Hunter Valley. Less familiar wine-producing countries have not remained blind spots either: they have also explored regions in Bulgaria, Georgia and Armenia, among others.
The first and non-negotiable criterion is exceptional quality – there is no compromise on that. Value for money is equally important: in every category, they seek out wines that offer the most for their price, from approachable everyday bottles to premium selections. They also aim to make the wine list genuinely distinctive, focusing primarily on bottles that are not found at every turn on supermarket shelves or in mainstream wine shops.
Alongside personal favourites, data also guides the search. Promising wines are identified on the leading international rating platforms using predefined quality and quantity thresholds. A wine’s score matters, but so does the number of reviews supporting it. The credibility of these ratings is assessed through human and machine-assisted checks, filtering out suspicious reviews and those submitted by inauthentic users.
Data, however, only takes a wine as far as the tasting table. The final decision is made through small-group, randomised tastings: only bottles that live up to their promise in the glass earn a place at Metszet. The result is a wine list offering outstanding choices across every price category.
SALON
At Metszet, wine is never an end in itself. It creates a relaxed yet attentive atmosphere in which it becomes easier to connect with one another, become absorbed in conversation and make room for new ideas to emerge. It sets the tone for the evening.
As a salon, however, Metszet aims to go further. We want to fill our spaces with cultural content and offer a platform to both established and experimental voices in contemporary culture. We welcome journals, independent publishers, artists and creative communities, giving them an opportunity to connect with new audiences through readings, launches, conversations and other collaborative programmes.
Both welcoming and inspiring, the space provides a natural setting for events aimed at a wider audience as well as smaller, private gatherings. Metszet will regularly host evenings that do not end with the final glass, but spark new ideas, questions and encounters. We will be introducing our partners and first collaborative programmes soon.
